The rocket was going straight up so the cone of the sonic boom never intersects the ground. You can hear the sonic boom of airplanes traveling faster than the speed of sound because they are going parallel to the ground. The contrail formed in a warm, moist layer of air sitting on top of a very cold dry layer of air. That's why you can see the ripples. The index of refraction of the two layers are very different. When the interface between them was disturbed it bent the sunlight.
